We present an easy take on a cocktail featured on the seasonal cocktail list. Designed as a party-sized prepared mix which is loaded full of tastes associated with Christmas time, rendering it perfect for your holiday party. Reserve the remaining cordial you can use for breakfast cocktails, sweets, or to make more rounds of bikinis.
The Bikini Cocktail
Makes enough for 10 guests
To make the Clementine Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
For the Cocktail (makes 850ml, serving 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (see above)
A few cranberries, as a garnish
Mandarin essential oil, to finish
Method
For the Cordial: Place the listed ingredients inside a pot, bring to a simmer, agitating to dissolve. Then, turn off the stove and let it to reach room temperature fully. Decant into an clean bottle, seal keeping it chilled, it will last for about one month.
Preparing the Premix: Mix all the liquid ingredients in a sizeable container, allow it to infuse for 60 minutes, then filter it , ideally through a fine cloth, to ensure it's perfectly clear.
For serving: Measure 85ml of your cocktail base to a stirring glass containing ice, and agitate gently for a minute to chill. Pour to a cold coupe glass or similar, top with a few cranberries and finish by giving it a brief mist of mandarin oil over the top.
